Mother's Old Fashion Banana Cake

While the original title on this recipe was probably Old Fashion Banana Cake, I got it from my Mom. Now it's Mother's Old Fashion Banana Cake.

Preheat oven 350F

Ingredients:
2 1/4 Cups Sifted Flour
1 2/3 Cups Sugar
1 1/4 Teaspoons Baking Powder
1 1/4 Teaspoons Baking Soda
1 Teaspoon Salt
Sift above ingredients into 3-quart bowl.

2/3 Cup Evaporated Milk (if not on hand, just use regular milk)
4 Teaspoons Vinegar
Mix milk and Vinegar in separate small bowl. Let sit.

2/3 Cup Soft Shortening ( I use Butter Crisco)
1 1/4 Cups Mashed Bananas (4 Bananas)
Beat well together in medium bowl.

3 Eggs

Directions:
Add to flour in 3-quart bowl, half of the milk mixture and all of the banana mixture; Beat hard 2 minutes.
Add rest of the milk and 3 whole eggs. Beat hard 2 minutes.
Bake in 9"x13" cake pan for 45 minutes or until toothpick inserted in middle comes out clean.
Remove from oven and let cool.



See how nice it pulls away from the sides of the pan? Just cut and serve. Or, in this family we cut a square of cake, slice in half horizontally and spread with butter. Sprinkle cinnamon/sugar over and eat.
