Texas Brownies
First of all, while this is my most requested recipe for Brownies, it is not my own. Years ago, I was in a Recipe by Mail Club and this is one of theirs. And though I have tried other from scratch Brownie recipes, these are by far the best, in my opinion and several of our family and friends circle.
Tools Needed:
1 Jelly Roll Pan (17 1/2 inches by 11 inches)
Measuring Cups
Measuring Spoons
Mixer
Large Bowl
Heavy Saucepan
Spatula
Ingredients for Brownies:
2 Cups all purpose Flour
2 Cups granulated Sugar
1/2 Cup (1 Stick) Butter
1/2 Cup Shortening
1 Cup strong brewed Coffee
1/4 Cup dark, unsweetened Cocoa
1/2 Cup Buttermilk*
2 Eggs
1 Teaspoon Baking Soda
1 Teaspoon Vanilla
Ingredients for Frosting:
1/2 Cup (1 Stick) Butter
2 Tablespoons dark Cocoa
1/4 Cup Milk
3 1/2 Cups unsifted Powdered Sugar
1 Teaspoon Vanilla
*Tips: If you don't have buttermilk on hand, substitute 2 Teaspoons Vinegar or Lemon juice. Mix into 1/2 Cup Milk. Or use powdered buttermilk. Mix according to directions on package.

1/4 Cup Milk

Directions:
- In a large mixing bowl, combine Flour and Sugar.
- In heavy saucepan, combine Butter, Shortening, coffee and cocoa. Stir and heat to boiling.
- Pour boiling mixture over the Flour and Sugar in the bowl. Add the buttermilk, eggs, baking soda and vanilla.
- Mix well, using a wooden spoon or high speed on electric mixer.
- Pour into a well buttered jelly roll pan.
- Bake at 400F for 20 minutes or until brownies test done in the center.
- While brownies bake, prepare the frosting. In a saucepan, combine the butter, cocoa and milk. Heat to boiling, stirring.
- Mix in the powdered sugar and vanilla until frosting is smooth.
- Pour warm frosting over brownies as soon as you take them out of the oven. Cool. Cut into 48 bars.
Great for parties, potlucks or just at home.
