Dessert Crepe Batter


  Now, though this pic is from his first day of school a couple years back, I wanted to include a recipe he had brought home from school. He was excited about it because they had made some in class and he wanted us to make some at home. I think we did, but even if we have not yet made them, I wanted to include this recipe, because it is so easy to make. And if you are a beginner in the kitchen, this is a good starting out recipe.

INGREDIENTS

4 Eggs
1 Cup All-Purpose Flour
2 Tablespoons Sugar
1 Cup Milk
1/4 Cup Water
1 Tablespoon Melted Butter

DIRECTIONS
  1.  Beat eggs in a bowl.
  2. Slowly add flour and sugar, alternating with milk and water. Then beat with a whisk or electric mixer until smooth.
  3. Beat in melted butter.
  4. Chill batter at least one hour.
  5. Cook in crepe pan or small skillet.
Makes 20 to 25 crepes. Fpr dessert crepes, you can fill these with fresh fruits and top with a dollop of whip cream or yogurt. Fill with banana split ingredients and top like a banana split. For breakfast crepes fill with scrambled egg and meat of your choice: diced ham, crumbled bacon, ground sausage, chorizo, and shredded cheese. Top with salsa or ranch dressing. For dinner, wrap crepe around grilled chicken, diced green peppers, chopped black olives and mushroom stems. Top with a cheese sauce or some of that queso you can buy in the snack aisle. Just heat a little bit up in small bowl in microwave and pour over stuffed crepe. Serve sour cream and guacamole on the side. These are just a few ideas that popped into my head while I was sitting here typing. I must be hungry. If I wasn't, I am now.

Why go out for gourmet, when you can fix it at home?
