Terri's Beanie Weenie Scallopini

Beanie Weenie Scallopini  When my son Phillip was a toddler, we listened to The Adventures of Patch the Pirate . On one of his adventures he landed in the old west and met a fascinating character who ate a dish called Beanie Weenie Scallopini. Phillip asked me what was in it, because, as you well know by now, Moms know everything. Though the story does not say, the title gives us direction. 8 Hot Dogs 1 LB Elbow Macaroni Noodles ( I have used various other pastas over the years, but always come back to macaroni) 1 15 OZ Can Baked Beans (any flavor will do) 1 15 OZ Can Cream of Mushroom Soup Shredded Cheddar Cheese Prepare Noodles according to package; drain. Warm hot dogs; slice and add to noodles. Add beans (do not drain or rinse). Continue stirring over low heat. Stir in mushroom soup. Heat all the way through.  Remove from heat. Donna's Turkey Corn Chowder

Turkey Corn Chowder - Donna Gaspardo - Alvin, Wisconsin PCG 1/4 Cup Butter 5 medium Potatoes, pared, chopped 4 Teaspoons Salt 2 Cups Water 5 Cups Milk 1/4 Teaspoon Dried Thyme 3 Cups cut up Roast Turkey 4 medium Onions, chopped 2 stalks Celery, chopped 1/2 Teaspoon Black Pepper 1 Chicken Bouillon Cube 24 OZ Whole Kernel Corn 1 Cup Cream 1 1/2 Teaspoons Paprika 2 Tablespoons Butter Saute onions in 1/4 Cup butter in large kettle. Add potatoes, celery, salt, pepper, water and chicken cube. Cook covered 15 minutes or until vegetables are tender. Add milk and rest of the ingredients, except the 2 tablespoons of butter. Heat; dot with butter and snipped parsley (if desired).  Makes 8-10 servings. 

Joan's Noodles Alfredo

Noodles Alfredo - Joan Noonan - Monico, WI PCG 8 OZ Wide Egg Noodles 1/2 Cup Butter or Margarine 1/2 up Light Cream (20%) 1 Cup grated Parmesan Cheese 1 Tablespoon Parsley Flakes 1/4 Teaspoon Salt Dash of Black Pepper Cook noodles as directed on package; drain. Heat butter and cream in small saucepan over low heat. Stir in cheese, parsley flakes, salt, pepper. Be careful of your heat as the butter-cream mixture will scorch easily. Return drained noodles to pan; stir creamed mixture into noodles gently until all are coated. Serve immediately.

Long John Pizza

LONG JOHN PIZZA - Sister Sharon Littleton - Monico, Wisconsin Pentecostal Church of God  1 LB Ground Beef 1/2 LB Pork Sausage 1 Egg 1/8 Teaspoon Garlic 1/2 Teaspoon Celery Salt 1/8 Teaspoon Black Pepper 1/4 Teaspoon Oregano 2/4 Cup Fine Bread Crumbs (if bread crumbs are not an option, try corn meal or crushed corn flakes) 8 OZ Pizza Sauce (store bought or homemade) 1 4 OZ Can Mushrooms, drained 3/4 Cup Mozzarella Cheese, grated 12 Sliced Hot Dog Buns (if eating gluten-free, use alternate) (oven temp not given; set at your discretion) Combine beef, sausage, egg, seasonings, bread crumbs; mix, then put on shallow baking pan. Bake 25 minutes. Remove from oven - drain - then top with sauce, mushrooms, cheese - bake 10 minutes. Remove from oven. Cut into 12 strips. Place on warmed hot dog buns. Serve immediately. *I am thinking this would make a great Game Day food.

I have decided to share some recipes here that my friends & family have shared through the years in various church cookbooks. Besides all the lovely family recipes from my family and extended family through marriage. Some folks have already gone home to be with Jesus. They have left behind a rich heritage of fine home cooking for those they have prayed for but never met. Did you know you could do that? Pray for the family members you don't have yet? God honors these prayers. I know. They are the reason I got saved: somebody prayed for me. They prayed for my salvation before I was born. They prayed for my salvation when I was lost in sin. They prayed for me to love Jesus. And, so, I too pray for the family members I have. For the ones I have yet to gain. For the children of my children and their children, should our LORD tarry His return.
