Grandma Bavetz' Potica

After sending out a request for who had it, Auntie Fannie sent me Grandma Bavetz' recipe. And then I misplaced it. So here it is.

Dough
1 Cup milk
1 Egg yolk
3/4 stick Margarine
1 1/2 teaspoons salt
1 pkg dry yeast
1 teaspoon Sugar
3 Cups flour

Directions

Dissolve yeast in 1/2 cup warm milk. Heat remaining milk to melt margarine in it, put in large bowl. Add sugar, salt and egg yolk. Mix together. Add yeast. Add flour and mix, scraping sides of bowl with fingers, adding extra flour if needed to knead dough until dough does not stick to bowl. Set dough aside to raise while mixing filling.

Filling

2 Cups shelled walnuts
6 large graham crackers
1 1/2 sticks Margarine 
3 eggs, lightly beaten
2 egg whites, lightly beaten
3/4 Cup sugar 
1 teaspoon Cinnamon
1/2 teaspoon lemon juice

Directions

Grind walnuts and graham crackers together. Melt butter in large saucepan, add lemon juice and cinnamon. Mix together well. Add ground nut mixture and mix well. Add beaten eggs, egg whites and sugar. Mix well. (you don't want lumps or unmixed ingredients)

Roll out dough thin, but not very thin. Spoon filling on top and spread to cover dough. Sprinkle raisins over filling, if you want. 
Roll up jelly roll fashion. Place in greased pan and let rise, for about 1/2 hour or until double in size. 

Bake at 350 degrees Fahrenheit for 40 minutes until golden.
